Planked Greek Marinated Shrimp

Yield: 4 servings

Marinade:
¼ cup dry white wine
¼ cup olive oil
3 cloves garlic, smashed
1 tablespoon fresh oregano, chopped or 1 teaspoon dried
Zest of one lemon
½ teaspoon kosher salt

Shrimp:
1 ½ pounds large shrimp, peeled and deveined with tails left intact
2 Fire & Flavor Cedar Grilling Planks, soaked
Crumbled feta and lemon slices to serve

FIRST  Combine wine, olive oil, garlic, oregano, zest and salt in a zip top plastic bag and season with freshly ground black pepper. Add shrimp, tossing to coat, and marinate in refrigerator for 15-20 minutes.

NEXT  Preheat grill to 350°F or medium-low. Remove shrimp from bag and discard marinade. Place soaked plank on grill, close lid, and heat for 3 minutes. Flip planks and place shrimp in a single layer on planks. Close lid and grill for 8-11 minutes, until shrimp are pink. Remove shrimp and planks from grill, garnish with lemon slices and feta. Serve immediately.
