Planked Salmon with Coffee Rub and Fruit Salsa
The sweetness of fresh fruit pairs perfectly with cedar plank grilled salmon and a light dusting of our best-selling coffee rub.

Yields: 4-5 servings
Salsa:
2 cups chopped fresh peaches or mango
½ cup chopped red bell pepper
¼ cup thinly sliced red onion
Juice of 1 lime
¼ cup fresh basil leaves, torn
Salmon:
2 teaspoons olive oil
1½ teaspoons Fire & Flavor Coffee Rub
1½ - 2 pound salmon fillet
1 Fire & Flavor Cedar, soaked
Lime wedges for serving
FIRST Combine peaches, pepper, onion, and lime juice in a medium bowl. Season with salt and set aside.
NEXT Preheat grill to medium-low heat, about 350°F. Rub salmon with olive oil, sprinkle with Coffee Rub, and season with additional salt, if desired. Place soaked plank on grill, close lid, and heat for 3 minutes. Using tongs, flip plank, place salmon on heated side. Close lid and cook until salmon is medium-rare (remember fish will continue to cook after removing from grill), about 12-15 minutes, depending on thickness of fish.
LAST Remove salmon and plank from grill and squeeze lime over salmon. Stir fresh basil into salsa and serve with salmon.
